Whether you want scrambled, fried, boiled, egg white replacers, omelette, runny yolks, entire egg replacers for baking, or even just egg-flavoured seasoning, vegans have cracked it.

Absolutely! Depending on your needs, there are a variety of egg substitutes for vegans.

They’re made from plant-based ingredients like tofu, chia seeds, chickpea flour or mung bean protein isolate. These egg substitutes can be used to serve a single function or they can be multifunctional, whereby they are designed to mimic the texture, functionality and/or flavour of real eggs.

They can be used in loads of different dishes, from omelettes to baked goods. There are even some standalone fake eggs that can be eaten by themselves (no other ingredients required!)

There are actually loads of plant-based alternatives available that work just as well (if not better) than eggs. For starters, you can use flax or chia seeds to create a gel-like substance that’s great for binding ingredients in recipes like pancakes or burgers. Another option is to use mashed bananas or unsweetened applesauce, which work particularly well in baking recipes. For savoury dishes, you can use nut butters, like almond or peanut butter. Breadcrumbs and ground oats are another great option to help hold everything together.

There are also some ready-made products (which we’ve discussed below) that can be used to bind food without eggs.

Starches are your best friends here. Cornstarch or arrowroot powder can be mixed with a bit of water to create a paste that thickens sauces, puddings and condiments. Another option is to use potato starch or tapioca starch, which work particularly well in gluten-free recipes. Many starches will require heat activation before they work as effective thickeners.

This vegan company launched their egg alternative back in 2020 and it caused quite the stir. Up until then, the most realistic vegan scrambled egg alternative was Just Egg (see below), which isn’t available in the UK (sad face). So we were particularly happy to see Crackd appear on the market.

It is very similar to Just Egg in that you can use it like scrambled eggs, or as an omelette. On top of this, you can use this for baking cakes, binding frittatas, and even roasting Yorkshire puddings! We’d say they’ve cracked it…

Oggs

Oggs is an aquafaba egg product. If you haven’t heard about aquafaba yet, where have you been? And if you’re not a fan of chickpeas (weird) then you can now buy aquafaba separately with OGGS! 

We recommend checking out the OGGS website, they’ve got a really fun calculator that works out how many chickens have been given the day off thanks to your use of their product. 

If like me, you’re a fan of whisky sours, then this will help you create the perfect vegan alternative!

We’ve tried and tested it and can confirm that it also works perfectly when baking a vegan victoria sponge cake.

Just Egg

Lucy and I tried this one in Hong Kong and America…IT IS AMAZING! 

It’s just like scrambled eggs. What’s more, because it’s legume-based, it’s rich in plant-based protein and other nutrients. They even make Folded Egg, which you can fry, microwave, or even pop in the toaster! We haven’t tried this one yet but, if the scramble is anything to go by, it would make an awesome vegan omelette.

Oh, and you can’t get Just Egg in England at the moment, although there are rumours it will arrive on UK and EU shelves soon. So to all you British folk…let’s petition them to bring it over!

The OG of vegan egg alternatives. Follow Your Heart have been selling this vegan egg product for as long as I can remember.

It is a solid choice, albeit more on the expensive side.

Zero Egg

A plant-based egg alternative that scrambles, bakes, and fluffs! What’s more, you can get it powdered, as a patty, or as liquid.

The downside? They are mostly aimed at selling to restaurants. But you will find it dotted around the US and the EU!

Homemade vegan egg recipes

Mashed ripe bananas

1 medium banana to replace 1 egg

Here’s a recipe that uses mashed bananas as an egg replacement: American-style plant-based pancakes? Gluten-free and full of vegan protein.

Aquafaba (bean water)

3 tbsp of aquafaba to replace 1 whole egg

Chickpea water (or miracle water) is a gamechanger. Mousses, meringues, ice cream, mayonnaise, marshmallows, whisky sours, and more.

With similar protein and starch contents to eggs, aquafaba can be used as a direct vegan replacement in loads of recipes, including these mouthwatering vegan brownies…

Flax and chia egg

1 tbsp chia seeds/ground flax and 2 ½ tbsp water to replace 1 egg

Most vegans will have flax and chia in their cupboards, so these are a great make-at-home alternative to eggs.

Silken tofu

60g tofu (or ¼ cup) to replace 1 egg

Not the best plant-based alternative for baking, but if you’re at a push! Nevertheless, silken tofu is fantastic as a scrambled egg replacement, so stick it in your vegan pad thai, quiche, or breakfast scramble!

It also blends well to make the base for a vegan quiche.
